The Dish 

Round out your lunch or dinner entrees with the addition of this very veggie side salad. Fresh cherry tomatoes, cucumbers, bell peppers, and leafy lettuce are drizzled with a simple dressing of red wine vinegar and low fat Greek yogurt. The salad is then seasoned with a little pinch of Italian seasoning and cracked black pepper, giving this dish a very Mediterranean vibe. Feel free to serve this salad alongside any of your favorite meaty mains.

If you need to boost your veggie quota for the day, feel free to add in any additional ingredients to this salad; roasted or raw mushrooms, broccoli, carrots, zucchini, etc. all make lovely additions.

Ingredients

  • 1 cup30 ggreen lettucechopped
  • ¼ cup35 gtomatoesdiced
  • 2 Tbsp.20 gcucumberdiced
  • 2 Tbsp.20 ggreen bell peppersdiced
  • 2 Tbsp.20 gred bell pepperdiced
  • 1 Tbsp.15 glow fat greek yogurt
  • 2 tsp.10 mLred wine vinegar
  • ¼ tsp.1 gitalian seasoning
  • ¼ tsp.0.75 gblack pepper

Preparation Instructions

  • Place chopped lettuce, tomatoes, cucumbers, and bell pepper in a serving bowl.
  • In a small bowl, place yogurt and red wine vinegar, whisk to combine the dressing.
  • Drizzle the dressing over the salad; sprinkle with Italian seasoning and black pepper before serving.
