Just thought I would post a couple things that have been going on in our kitchen. Interested in knowing if you have been creative with your food or leftovers.
Post up and share if you like. The main image is of a leftover chicken curry that I turned in a make shift jambalaya dish. Made riced cauliflower (had half a head left over) with about 1.5 oz of asiago cheese. The dish has chicken, sausage and shrimp, celery, red bell pepper, white onions, mixed greens, and a good amount of garlic.
Next one is a sourdough focaccia with garlic and rosemary in the bread. Black olives and red onion on top.
Lastly is some chinese eggplant, yellow squash, and zuccini grilled and ready for the weeks meals. I love eating grilled veggies for lunch with some hard cheese or some roasted chicken or pork. Yum.
