Weekend Check-in 👻: May 15th

Good morning Blendies! How are we doing this Saturday morning/afternoon/evening? Any fun plans for this weekend? Or maybe nothing, because sometimes after a busy week, having nothing on the agenda can be quite nice!

What’s on the workout agenda for today? I’m thinking a walk or a bike ride is in order. Something gentle. When my mom was here last week, she brought the bicycle that I used while in college; she had since had it refurbished, so it rides like it’s brand-spanking new! My kids have been riding it and loving it; now it’s my turn!

And what about food? Hubby is taking the boys to the drag races; I opted out. It’s actually pretty amazing though- one of Hubby’s former co-workers - who is a paraplegic- built his own race car and is racing tonight. Talk about not letting anything stop you! But this means that I am on my own for dinner, which means that I am making something that I’ve wanted to make for a long time, but that no one else would eat: khachapuri, or Georgian cheese bread. This version is a pizza dough stuffed with feta and mozzarella, topped with kale and an egg. I’ll have salad on the side. But what’s on your menu for today?

I’ll leave you with a picture of the Spanish broom in my backyard. I just LOVE these plants. They can get as big as a car, and when they’ve fully bloomed? It’s beautiful! They’ve been outlawed in some states because they’re considered invasive. They can invade my yard!
