You can make this with any type of summer squash, like chayote, zucchini, summer squash, or even green beans.
1 tsp coconut oil
2 tsp mustard seeds
2 tsp dried curry leaves
1 dried red chili if you like things spicy
2-3 cups diced squash or green beans
1/2 tsp ground turmeric
1 tbsp unsweetened shredded coconut
Salt to taste
1/4 cup water
Melt coconut oil on medium heat. Add mustard seeds to oil and allow to fry until they sputter. Add curry leaves and red chili and allow to fry, which happens quickly. Add squash and saute. Sprinkle turmeric and saute. Add 1/4 cup water and put a lid on the pot and let it steam for 5 minutes. Remove lid and sprinkle shredded coconut. Give it a good mix, then turn off the heat, and add salt to taste.
