I've been having this delicious bowl of oatmeal for a while now, usually first thing in the morning (after having my ACV + Lemon) and I thought I'd share the recipe here if anyone is keen! :) It keeps me full and its what I have before working out.
1/4 cup steel cut oats
1/4 cup soy milk (use whatever you prefer almond milk, regular milk etc)
1/4 cup water
1 banana sliced
1 egg white
1 tbsp nut butter (I recently got some delish almond maple nut butter)
Optional: Cinnamon, honey/maple syrup/vanilla (I add 1tsp of cinnamon, 1 tbsp of honey and 1tsp of vanilla)
Add all the ingredients to a pot over the stove-except for the egg white and peanut butter-and cook as usual stirring constantly to breakdown the banana. When the oats are about 90% done, add the egg whites stirring it really quickly to avoid clumps. This makes the oats super creamy and sinful (and more protein-YAY)
Put your nut butter in a bowl and add the hot oats over it and let it sit for a second to melt the nut butter before stirring it through.
And there you have the most perfect bowl of oats!
