I try to make my meals as colorful as possible, which in all honesty can be a challenge at times. Today’s lunch:
ORANGE: Sweet potato, orange pepper
YELLOW: Yellow pepper, egg
RED: Red pepper, tomato
GREEN: Spinach, broccoli, asparagus
PURPLE: Pickled purple cabbage
BLUE: Blueberries
BROWN? not really a rainbow color 😆: Baby bella mushrooms
I find having things at the ready makes eating colorful a bit easier. Some “cheats” I find particularly helpful are: using packaged pre-washed spinach, colored baby bell peppers and keeping chopped purple cabbage submerged in white vinegar stored in the fridge.
