Resting all day and not being active is tough on willpower. I find I snack a heck of a lot more than usual, out of boredom. So this lunchtime I decided to make a really light and healthy lunch, in order to allow for a little guilt-free snacking!
Beetroot, tuna, pickles, eggs, lemon juice, a little mayo. Sure, I could have added beans, sweetcorn, chickpeas etc, but I was feeling lazy (yes, too lazy to decide to open another tin).
Tastes light and yummy! Lots of protein. Need some greens later with dinner....
