The Dish
This quick-serve inspired recipe has been modified with more nutritionally dense ingredients all while still imparting all the tasty flavors we love. Lean ground turkey is sauteed with loads of delicious vegetables — zucchini, yellow squash, green bell peppers, onions, and garlic. Smashed kidney beans are spread over whole wheat tortillas along with crushed tomatoes and cheese, creating a layered stack. This meal will make for an enjoyable and nutritious lunch or dinner.
Prepping Ahead/Time-Saving Tips
The ground turkey and veggies can be sauteed ahead of time and chilled until ready to assemble the pizza. The same can be done for the smashed kidney beans; prep and refrigerate until ready to use.
Ingredients
- -- pan release spray
- 2 oz.lean ground turkey
- ¼ tsp.taco seasoning
- 1 tsp.garlicpeeled and minced
- 2 Tbsp.red onionpeeled and diced
- ½ cupcanned kidney beansdrained and rinsed
- ¼ cupzucchinidiced
- ¼ cupyellow squashdiced
- ¼ cupgreen bell pepperdiced
- ¼ cupcanned crushed tomatoes
- ¼ cupsalsa
- ¼ tsp.taco seasoning
- 5 oz.whole wheat tortilla2 each
- ½ oz.low fat mozzarellagrated
- 1 Tbsp.scallionschopped
- 1 Tbsp.low fat greek yogurt
Preparation Instructions
- Preheat oven to 400°F or 200°C. Line a medium baking sheet with aluminum foil and lightly grease with pan release spray.
- Lightly spritz a nonstick skillet with pan release spray and heat over medium.
- Crumble the ground turkey into the skillet, season with ¼ tsp. (.75g) taco seasoning and garlic, stir to combine, and sauté for 3-4 minutes or until the ground turkey has browned.
- Add the zucchini, yellow squash, and bell pepper to the skillet; continue to cook for 2-3 minutes or until the veggies are tender. Remove from the heat and season to taste with salt and pepper.
- Place the kidney beans in a small bowl and, using the back of a fork or potato masher, press and smash the beans until semi-smooth.
- Place one of the tortillas on the prepared baking sheet. Spoon the smashed beans over the tortilla, spreading out in an even layer.
- Top the beans with half of the crushed tomatoes, spreading out in an even layer.
- Spoon the cooked turkey and vegetables over the tortilla, sprinkle with half of the cheese, then place the final tortilla on top.
- Spoon the remaining crushed tomatoes over the tortilla, sprinkle with mozzarella cheese, and season with the remaining ¼ tsp of taco seasoning.
- Place in the oven and bake for 10-12 minutes or until warmed through and the cheese has melted.
- Remove from the oven and top with yogurt, salsa, and scallions before serving.
