There’s nothing better than grilled seasonal vegetables. This simple side dish is a perfect pairing for summer mains — grilled meats, pasta dishes, casseroles, etc. Zucchini, yellow squash, broccoli, green beans, tomatoes, and onions are seasoned to bring out the natural flavors of the vegetables — simply a little garlic, salt, and pepper. One trick we use when grilling vegetables is to use a wire rack, placed over the grill grates. This can help keep trickier veggies (green beans and squash slices) from slipping between the grill grates.
Prepping Ahead/Time Saving Tips
To save on time or as a meal prep ahead option, feel free to season, grill, chill, and reheat the veggie. These grilled vegetables are also pretty enjoyable chilled, you could use them as salad toppers or sandwich fillers as well.
