The Dish
This unique breakfast dish is inspired by all the culinary greatness that is the Mediterranean, a region flush with vibrant and flavorful ingredients. Split and roasted zucchini are stuffed with a scrambled egg mixture filled with sun-dried tomatoes, sauteed onion, garlic, and feta. To make this meal more nutritionally balanced (as well as filling), we use a combination of egg whites and whole eggs in the stuffing. On the side, we added a simple whole wheat toast.
