I was actually planning on making donuts because I haven't had one in YEARS and was actually craving some, but no way do I want to succumb to the chained fast-food places that always surprise me at this additives and colorings they use.
Anyway.
I plan to make them one day! But I changed my mind this morning and made these butternut mini pancakes to dip in honey, accompanied with a cappuccino in my souvenir mug (says I need coffee 😎). These were probably the best ones I ever made!
If anyone wants to try it...
A rough guide (i didn't measure) for 24 little cakes (it served 3 here):
About 2.5 cups flour (i used a mix of white, whole wheat, and oat)
3 eggs
About 1 cup pureed butternut squash
About .5 tbsp salt
Water as needed.
Just mix it all together and you should get a tacky, chunky dough. Then in a frying pan, pan fry in some olive oil, flipping according to preference of underdone vs well done ( I like both ) and get out your good honey cause that is the star of the show!
Anyways, I hope you all had a great holiday! I started a jump rope challenge to ease my knees into some lighter impact exercise. I also have a doctor's appointment wednesday....hopefully something good comes from it!
Nooooow, time to start thinking about the next holiday. Haha!
