This is the first time I ever handled a pumpkin in the kitchen! Aside from carving Halloween pumpkins, of course.
The lady at the market recommended using the whole pumpkin, but its skin was so rough that I still peeled it. The dough came together easily. I used wholemeal spelt flour, raw brown sugar and an extra dash of cinnamon.
The bread has even more flavour after sitting on the counter for a day or two, but that didn't stop me from tasting it quite soon after baking. :D Have been eating it for breakfast and as a snack the past two days.

Notes for next time: a little less sugar (I think I forgot to use half) and maybe some more spices. I was kind of distracted when measuring, so I might have used too little. Still very yummy!
