Veggies for Breakfast = Radish Hash

I am trying to find different ways of incorporating veggies at breakfast, aside from the obvious omelet.

I came across a radish bowl recipe on Keto Connect, and decided to try it with my own modifications (I don’t follow Keto), which were turkey sausage, scant 2% sharp cheddar, added onions/peppers, and a little cilantro.

While nothing can truly replace a potato, like the radishes are attempting to do, the dish was not bad - even for someone like me who is not much into eating radishes.
