Homemade meze dinner

Meze plate with homemade dips ❤️

This is another great hot weather meal. It’s maybe a bit lighter on veg then most of my dinners but it’s got around 2 serves. I didn’t include much of the chicken as the yoghurt and hummus are packed with protein too. I used wholewheat pitas to increase the overall fibre.

Hummus is made by blending a can of chickpeas with a clove of garlic, juice from half a lemon and some olive oil. I took most out (saved some for tomorrow night) and then added some beetroot and blended again so I have 2 types of hummus.

Baba ghanoush is made by roasting an aubergine whole and scooping out the flesh. Blend flesh with juice from half a lemon and a clove of garlic.

Tzatziki is natural yoghurt mixed with a small amount of lemon juice, chopped cucumber and chopped mint.

I coated chicken breast strips in yoghurt mixed with turmeric, cumin and coriander then baked.

Finished off by baking strips of pita until crispy.
