I was too hungry to wait until I went shopping for lunch today but what I ended up making was so easy and turned out really delicious. These are all things I had from before we went on holiday - mostly in cupboard but peas were in the freezer and eggs last ages in the fridge.
I used Tilda brown rice/quinoa mix 1/2 packet (probably similar portion to 50g dry rice, cooked). Stir the cooked rice in a pan with frozen peas and half a teaspoon each of cumin, coriander and turmeric. Season if preferred and empty into a bowl.
In the same pan, cook an egg on medium heat (I don’t like mine too uncooked in the middle so covered with a smaller pan). At the same time, alongside the egg I toasted some sunflower seeds.
Top the rice with egg, sunflower seeds and pepper. So good - especially the crunch from the seeds. Could easily substitute most of the ingredients for what you have too.
