Today I had a proud moment in the kitchen. I am a firm believer in following recipes that I find and never really take leaps and create my own recipes. So today I had gluten free lasagna noodles and could not really find a good recipe that followed my high carb, low fat vegan recipe so I decided to just do my own thing and use the ingredients I had around in my kitchen. SO I created a lasagna that has gluten free lasagna noodles, followed by a layer of homemade sauce using fresh tomatos, canned tomato sauce, kidney beans, onions, scallions and garlic. I then created a creamy "cheese" sauce using steamed cauliflower, some spices, dijion mustard and soy milk all blended together in the blender. Lastly, I had a layer of vegetables that I had cooked all together that included spinach, onions, grated potatos,
and asparagus. And of course I layered it all up as lasagna would be and it tasted absolutely delicious and had all the consistency and flavors a lasagna should have!
