Hope everyone had a fabulous weekend. Warning! Long post as a lot was going on this weekend in the kitchen. So lets begin.
Friday: Dinner was enchilada casserole with seasoned turkey burger, turmeric rice, mixed greens, bell pepper, onion, and provelone cheese. Topped with a bit of sliced mozzerella while baking. Finished off with some sour cream and garlic pepper hot sauce.
Saturday: We headed to get groceries. When we came back we just snacked on fridge leftovers. That afternoon I made the three small loaves of sourdough and the one baguette.
Saturday night's dinner: Sourdough bread bowls from the little loaves and potato leek soup with bacon. Very tasty for sure. Storm wanted some goodies and whipped up this chocolate choclate chip apple pie filling and pecan cake. Soooo Gooood!
Sunday: Lunch was bruschetta with just a grating of fresh paresan at the last minute (made from baguette). The topping was crimini mushroom, pan roasted cherry tomato and red onion, fresh garlic, red/green chard, chickweed, and oregano from the garden. Added a smear of avocado to the crostini before topping. Really great flavors.
Sunday dinner: Chicken curry with red bell pepper, red onion, mixed baby greens, garlic, and coconut cream. Served over a bed of smoked paprika basmati rice. Also very good. First time Storm and Savannah had curry. So, I had to tame it down a bit on the spice. They liked it enough to eat it again though. SUCCESS! Maybe next time will be lamb.
