Hope everyone had a wonderful beginning to their week. Lots of issues resolved yesterday around home. So, off to the regularly schedule work week. Yesterday "In the Kitchen" was a rainy Monday morning. So of course we made a pot of chicken and barley soup.
Chicken back seared brown in pot for color and flavor. Add in white onion, carrots, celery, garlic, bay leaf, pepper, smoked paprika, and some turmeric. Sauteed for a few minutes then added some stock to cover. Simmered for 4 hours. Remove and debone chicken (added back in). Added in barley and some poultry seaasoning. Then simmered another 3 hours. Very hardy and just what the doctor ordered for a cooler night.
Storm, on Sunday, made a fabulous banana nut and coconut cake with butter/cream cheese frosting. It is sooo yummy. image of that below. Thank you baby!
