Hope everyone had a fabulous weekend doing what you love and getting your workouts or rest days in. Weekends are to short, but, we pack as much in as we can.
Friday night "In the Kitchen:" Last of the BBQ chicken went into a sandwich for a quick and easy end of the week meal.
Saturday: I was gong to make pitas for the freezer because we are getting low but decided to make pizza instead. Pesto base, mozzarella and parmesan, garlic, red onion, black olive, crimini mushroom, thinly sliced tomato. Very tasty. Also made some green chili verde salsa with roasted peppers, tomatillos, white onion and cilantro.
Sunday morning the power went out at 06:50 so Storm decided to make some apple pie bars instead of cleaning house. We can our own apple pie filling and this was left from 2019 harvest. Very good. Dinner was a special treat. Rib eye steaks and slipper lobster (small sweet about 5 oz each with shell) with side salad. Yum. Leftovers for lunch and probably dinner too.
Hope you all had a great weekend "In the Kitchen." Share what you had going on. Friends/family? Baking or canning? Or, did you just putter and came up with something great? Post up and share your successes and or failures. Have a blessed and prosperous day!
