I haven't been cooking very exciting meals these days, which is why I also haven't been posting recipes. I specialize in preparing meals with one hand LOL, and let me tell you, it's not the easiest thing. I have, however, figured out how to make a serving of steel cut oats in my pressure cooker, and now that we've entered Fall-ish in Las Vegas (the highs are below 100° finally!), I fully embrace the warmer breakfast.
So here it is: Oatmeal of the Day (OOTD)
Steel cut oats cooked in coconut milk with half of a mashed banana, topped with half of a diced banana, toasted coconut chips, and ground flaxseed. Pretty yummy!
