Recipe: Banana Maple Tahini toast

I've been away for a few weeks and returned to a mostly empty fridge. While scavenging for breakfast, I enjoyed this delicious banana maple tahini toast 😋 with a boiled egg on the side. If you've never had tahini before, it's a ground sesame seed paste made from white sesame seeds. In my experience, the quality of tahini varies widely, and purchasing a Middle Eastern or North African brand may lend you more authentic taste. Most people have enjoyed tahini as a key ingredient in hummus, but this recipe sweetens up this spread and serves it with banana.

INGREDIENTS:

1 slice whole grain bread, toasted

1 tbsp tahini

1 tsp maple syrup, honey, or other liquid sweetener of your choice

1/2 medium sized banana, sliced

A sprinkle of cacao nibs or chocolate chips, or grated chocolate (optional)

INSTRUCTIONS:

Mix tahini and liquid sweetener. It won't look like it mixes easily at first, but keep going! You'll soon get a lovely, silky, spreadable consistency.

Spread sweetened tahini on toast; top with sliced banana and optional cacao nibs, chocolate chips, or grated chocolate 😋

Delicious served alongside eggs, yogurt, or even some cheese!
