Daily Check-In: Saturday, May 8th (Ghost Edition!)
Hello FB Friends and happy Saturday!
Friends, I am obsessed with cauliflower lately. I recently discovered yet another way to prepare it: with lemon juice, olive oil, capers, and vegan parmesan. Delish! I also love cauliflower tacos, as kung pao, pureed in soups, in bahn mi, and served with pasta. I just love how versatile it is! What's a veggie you like to use in many ways? Do share!
Today is a lazy Saturday, so I don't think I'll be cooking tonight, although I'll prep some bread to take on a picnic tomorrow. Thai takeout sounds good to me.
For my lazy Saturday, I won't do much beyond a recovery stretching routine, and maybe a walk. The first week of Fit3 was great, but has left me rather sore all over! How about you all? Who's working and who's resting like me?
