This was so easy and fast to make. I scaled it down to just two eggs for myself and like a .5 pint of grape tomatoes. YUM! Who doesn’t love saucy tomato eggs for breakfast? This was especially nice for a cold, rainy day. Also a great way to use up some tomatoes that might be going a bit soft (past their prime).
