Cooked this recipe this weekend, so easy and delicious - wanted to share . . . . "Black Bean Soup:"
1 medium to large onion - diced
1 can of chicken broth (low sodium if you prefer)
2 cans black beans (low sodium if you prefer)
1 16 oz jar of medium red salsa (I used Pace Picante brand)
Heat the chicken broth and the onions on medium until the onions are tender (about 3 - 4 minutes). Add the black beans and salsa and any seasonings you like (I used fresh cracked pepper, pinch of sea salt and cumin). Get a good simmer going, then reduce the heat and let it sit on the stove on low (longer it stays on the burner, better it is). That is it! I served with some fresh bread and salad. Hope you enjoy!!!
