I have discovered the RX bars obsession at Whole Foods the other day, and I totally fell in love with them. The problem is, they are insanely pricey. $3 a bar. For my budget, that's a little much for as much as I could use them when I'm serving and don't have time to eat a real meal. So I decided to make them at home! It costs me $48 for ALL of this stuff, and that's for making them more than one time. So! You get your money's worth! Anyway. I thought I'd share the awesome recipe with you folks, in case you wanted to add it into your meal prep routine! :)
Coffee Chocolate RX Bar

Ingredients
3/4 cup unflavored egg white protein powder
1 cup medjool dates
1 cup raw almonds
3/4 cup raw cashews
1/4 cup raw cocoa nibs
2 tsp espresso powder
2 tbsp water
STEP 1
Measure out ingredients and place in food processor.
