We had these lemony green beans as a side tonight. They were loved by all! This dish is minimal and easy, so I thought I would share.
Trim & wash about a pound of green beans
Bring a pan/skillet of salted water to a boil. Boil beans for about 4 minutes or until done.
Drain water. Place beans back in pan.
To the beans add 1-2 Tablespoons of oil (I used avocado), approx. 1-2 Tablespoon of fresh lemon juice, 1 teaspoon of honey, 2 Tablespoons of slivered almonds (doesn’t have to be almonds), 2 Tablespoons of grated parmesan. Toss to coat. Salt as needed.
Remove from heat. Garnish with lemon zest.
Note: Honey is optional. Though I think it enhances the lemon flavor more than sweetens here.
