Homemade Veggie Burger Recipe: Black Bean Burgers

Overview

Black bean burgers are low in fat and calories but high in fiber and protein. Unlike the ones that you buy in the store from the freezer section, this recipe is made of all healthy ingredients, with no additives or preservatives. Aside from being healthier than store bought versions, these homemade ones taste way better!

This recipe makes 4 large gardenburgers, but we usually make it in large batches so that we can freeze them and eat them anytime we want.


Ingredients
1 Can (16 ounce) Black Beans
1 Onion, diced
½ Cup Corn
1 Egg
3 Garlic cloves, minced
1 Tbsp Cumin
1 Tbsp Chili powder
½ Cup Bread crumbs
Pepper

Drain, rinse, and lightly dry the beans; this is an important step that helps the ingredients stick together. Place them in a large bowl, and use a fork or spoon to mash them into a paste.

Add the diced onions and corn (and any other desired veggies, diced) to the mashed black beans.

In a separate small bowl, mix the egg and spices together; then stir it into the mashed black bean mixture.

The mix is very moist at this point and will not stick together; add the bread crumbs in to make it easier to form into patties.

Form into 4 veggie patties and place on a lightly greased sheet.

Cook at 375° for 10 minutes on each side.

If you don’t have the exact vegetables at home that are listed in the ingredients above, that doesn’t mean you can’t make the gardenburgers. It’s easy to get creative as to what extras go into the recipe; you are virtually unlimited as to what you could sub out or add to for the onions and corn. You can also easily play around with what kind of spices you use to flavor the recipe.

Here are a few extra ideas of what might taste great in the Black Bean Burgers:
• Jalapenos (make them spicy!)
• Mushrooms
• Carrots
• Bell Peppers
• Broccoli
• Butternut Squash
• Asparagus
