Overnight oats—a meal preppers dream. An easily assembled breakfast item that works its culinary magic without the need for cooking. Rolled oats, nutritionally-dense chia seeds, and Greek yogurt are the base of this breakfast pudding recipe. A little tropical fruit medley topping of diced pineapple and mango are lightly seasoned with ginger and honey…super delicious. And, a lovely little garnish of toasted coconut and fresh mint are added right before serving.
Hacking this Recipe: Each aspect of this recipe can be made well in advance. The overnight oats (naturally), can be made the day before, as well as the tropical fruit medley. Leaving only the quick task of pudding assembly (a task that only takes mere minutes) and garnishing.
