The Dish
These mini muffins are ideally sized (and, ideally flavored) for a quick breakfast on the go or as an afternoon snack. The batter is a nutritiously dense combination of whole wheat flour, sweet potato, almond milk, oats, and olive oil, mildly sweetened with natural maple syrup. Chai is a fragrant and flavorful beverage heartily seasoned with cardamom, ginger, cinnamon, cloves, and anise, and an ingredient we love cooking and baking with. We wanted to capture all of those chai aromatics and infuse them into our breakfast meal routine without having to craft chai tea from scratch (chai has a lot of ingredients). To simplify our prep steps and still achieve the desired flavor, we use chai latte mix (easily found at your local grocery store in the coffee/tea aisle).

These muffins can be made ahead of time, frozen, and thawed when ready to enjoy. When prepping and shopping for this recipe, 1 banana (peeled) is roughly 5 oz or 130-135 g.
