The Dish
This is our go-to recipe when we need a quick morning meal that is loaded with wholesome protein and vegetables. Turkey sausage is sliced and sauteed with garlicky mushrooms and baby spinach. A whole egg is then scrambled into the skillet, commingling with the sausage and veggies. A light sprinkle of feta cheese crumbles is added, giving us a positive check in the dairy category, as well as infusing the scramble with oodles of flavor.

When shopping for sausage, we love the precooked Italian turkey or chicken sausages. The fact that they’re already cooked (just needs to be reheated) is a big time saver. For whole eggs: on average, 1 egg equals 2oz or roughly 50g, averaging about 1 egg per person for this recipe.
