Tea time can be anytime with these vibrant open-faced sandwiches. We averaged about 10 minutes on our total prep time (and most of that time was waiting for the bread to toast), so, this is one speedy recipe. As for the ingredients, we wanted to keep the essence of “high-tea” fare, with a few modifications to enhance nutrition. Whole grain bread slices are spread with skim-milk ricotta (instead of the traditional cream cheese) and topped with cucumber and radish slices. Each piece of toast is then sprinkled with fresh dill and basil, drizzled with olive oil, and lightly seasoned with salt and pepper.
