Round out your lunch or dinner entrees with the addition of this veggie side salad. Fresh spinach, cherry tomatoes, cucumbers, bell peppers, and red onions are drizzled with a simple dressing of balsamic vinegar and olive oil. The salad is then seasoned with a little pinch of Italian herbs, giving this salad the Italian trattoria treatment. A little wedge of toasted whole wheat bread adds not only a nutritional balance but also provides an opportunity for post-salad dipping.

For the whole wheat bread, we calculated each slice to be approx. 1oz (25g), averaging half a slice of bread per person for this recipe. If you need to boost your veggie quota for the day, feel free to add in any additional ingredients to this salad. Roasted or raw mushrooms, broccoli, carrots, zucchini, etc. are all lovely additions.
