The Dish 

Hummus, surprisingly, is a really tasty component to have at breakfast. Chickpeas, the main ingredient in hummus, have a great buttery and nutty flavor, with an equally great creamy and smooth texture. They also happen to be a great source of fiber and lean protein, two nutritional components everyone likes to have in their breakfast meal mix. The hummus easily comes together in seconds with a simple blend in the food processor. Topping our homemade hummus are a nice mix of veggies—kale, cucumbers, and tomatoes—along with a fried egg, feta cheese, and plain Greek yogurt. A side of whole wheat toast comes in handy for scooping up all these tasty ingredients together in one bite.

The hummus can be made several days in advance and refrigerated until ready to assemble your breakfast bowl. On average, 1 whole egg equals 2oz or roughly 50g, averaging about 1 egg per person for this recipe. For the whole wheat bread, we calculated each slice to be approx. 2oz (35g), averaging 1 slice of bread per person.
