Gazpacho is the soup of Summer. Served chilled, gazpacho is a refreshing option to have during the hottest, peak days of summer, without having to heat up your kitchen. This cold soup originates from the Andalusia region of Spain. We wanted to use as many of the traditional ingredients as possible while still keeping this recipe easy and time-friendly. Our gazpacho is made using a blend of tomatoes, cucumbers, bell peppers, onion, and garlic, seasoned with a touch of vegetable broth and red wine vinegar. A little swirl of low fat Greek yogurt adds a nice creamy balance to this recipe. This soup is ideal for a take to work option and feel free to serve alongside your favorite toast or meaty salad for a well balanced meal. 

Inspired by the traditional English tea sandwiches, this heartier version uses the classic cucumber and cheese topping while being protein boosted by lean, grilled, and marinated chicken breast. The secret to building a dynamic and delicious meal is to layer flavor and texture. Creamy, low fat cottage cheese is nicely contrasted by the crisp-fresh cucumber slices. The balsamic and Italian seasoning marinated chicken is a delicious addition to these toasts, imparting an impressive sweet, savory, and smoky flavor. 

Prepping Ahead/Time Saving Tips 

This soup is perfect for prepping ahead. Once blended, transfer the soup to a sealable container, and refrigerate until ready to eat and enjoy. Wait to add the yogurt and scallions until you’re ready to serve.
