The Dish
This tasty Thai-inspired recipe is full of classic seasonings and bright, vibrant herbs and vegetables. The sauce plays two roles in this dish, as a stir-fry sauce and as a dipping sauce. It’s a delicious combination of lime juice, garlic, shallots, fish sauce, soy sauce, rice vinegar, and honey. After the ground turkey is browned, half of the sauce is added to the skillet, contributing a robust savory-sweet flavor. The seasoned turkey is then stuffed into fresh bibb lettuce leaves and topped with cucumbers, scallions, and basil. For those who like your food spicy, we recommend a little chili garlic sauce dolloped on each wrap. 

Hacking this Recipe: The sauce can be made several days ahead of time and kept refrigerated. 

Ingredients
Sauce: 
1 each or 1/4 cup (60 ml) lime, juiced 
2 each (30 g) shallots, peeled and minced 
2 each (5 g) garlic cloves, peeled and minced 
1 tablespoon (15 ml) fish sauce 
1 tablespoon (15 ml) reduced sodium soy sauce 
2 tablespoons (30 ml) honey 
2 tablespoons (30 ml) rice vinegar 
pinch crushed red pepper flakes (optional) 

Dish:
2 teaspoons (10 ml) sesame oil 
1 lb. (453 g) ground turkey 
1/2 head (60 g) bibb lettuce leaves, separated from the stem
1 cup (140 g) cucumber, thinly sliced or diced 
1/2 cup (30 g) scallions, chopped 
1/4 cup (5 g) fresh basil, chopped 
1 tablespoon (15 ml) chili garlic sauce (optional) 
lime wedges for garnish (optional) 

Preparation 

  • Combine sauce ingredients in a medium bowl (lime juice, shallots, garlic, fish sauce, soy sauce, honey, rice vinegar, and pepper flakes) and whisk until blended. Set aside of keep refrigerated until ready to continue cooking. 
  • Heat sesame oil in a large skillet or wok over medium-high heat. Once the oil is hot, crumble the ground turkey in to the skillet. Sear for 2-3 minutes, or until the turkey begins to brown. 
  • Add half of the sauce to the skillet and stir to combine. Continue to cook, stirring frequently, for another 2-3 minutes or until the sauce absorbs into the meat. 
  • Divide lettuce leaves between plates or place on a platter. Top lettuce leaves with seasoned turkey, cucumbers, scallions, basil, and chili garlic sauce (optional). Serve wraps with the reserved sauce on the side and with extra lime wedges for garnish. 

Vegetarian and Vegan Modifications: Feel free to substitute the ground turkey with your favorite ground vegan alternative. Crumbled tofu is also a lovely substitution. Replace the traditional fish sauce in this recipe with a vegan alternative. 

Gluten-Free Modifications: Substitute the soy sauce in this recipe with tamari soy sauce or another gluten-free alternative.
