We could all use a hearty helping of veggies in the morning! This recipe for california breakfast toast accomplishes our veggie goals as well as providing a tasty, satisfying morning meal that, with a little bit of prepping ahead of time, can be made in under 5 minutes. The base of this spread is a savory chickpea mash. Topping the chickpea mash is a wholesome assortment of baby spinach, cucumbers, cherry tomatoes, smashed hard boiled eggs, and feta cheese. A drizzle of balsamic vinegar and sprinkle of paprika add the finishing touches.

Aged balsamic will have a much thicker consistency than a younger balsamic. Even though all balsamic is aged, a younger balsamic comes from a more recent pressing, and will have much more acidity than one aged for longer. A proper aged bottle of balsamic will call out it’s aging on the label and, because of the care taken with a lengthier process, will be a little more expensive. Aged balsamic will drizzle nicely over your ingredients and impart much more flavor. For whole eggs: 1 egg equals 2oz or roughly 50g, averaging about 1 egg per person for this recipe. For the whole wheat bread, we calculated each slice to be approx. 1oz (25g), averaging 2 slices of bread per person for this recipe.
