This is one satisfying side salad! Tender-crisp broccoli florets are drizzled with a homemade caesar dressing. Our version of caesar dressing is yogurt-based and seasoned with fresh lemon juice, Dijon mustard, chopped garlic, parmesan cheese, and cracked black pepper. We can’t get enough of this more nutritionally-dense take on the classic caesar salad. Serve this salad alongside your favorite lunch sandwiches, wraps, or flatbreads. This salad is also a lovely addition to an Italian-themed entree as well.
Hacking this Recipe
The Greek Yogurt Caesar Dressing can be made well in advance and stored covered and refrigerated until ready to use. The broccoli can also be steamed the night before and refrigerated until ready to serve. We definitely recommend waiting until right before consuming the salad before drizzling the broccoli with the dressing. This will help maximize the flavor and keep the dressing from getting diluted— no matter how dry your broccoli may look, there is still some hidden water in there!
Vegan Modification
For a vegan version of this recipe, feel free to use your favorite vegan caesar salad dressing recipe or store-bought variety. Instead of the parmesan sprinkle, crush up some sliced almonds or sprinkle your broccoli with a dairy-free cheese alternative.
