This salad attributes much of its flavor from a blend of Cajun and Caribbean ingredients and seasonings. Blackened seasoning (or Cajun seasoning) is a blend of big, bold, and fragrant spices, delivering a pop of heat and savory satisfaction. Blackened seasoning and Cajun seasoning can typically be found in the spice aisle at your local grocery store. If not, this spice blend can be found and purchased online. The dressing works in partnership with the spiced-upped chicken, cooling the palate with flavors of mango, coconut, and lime. The salad base is a tasty blend of baby greens, red cabbage, cucumber, tomatoes, and avocado. There’s a light sprinkle of fresh mint added in as well, boosting the freshness and highlighting the tropical-themed dressing.
Hacking This Recipe
There are oodles of prep-ahead options with this recipe. The salad dressing can be made well in advance and refrigerated. This recipe also makes a little over ½ cup of coconut-mango dressing, more than enough for this salad, and a little leftover for another salad later in the week or as a dip for fresh veggie snacks. You can also cook, slice, and cool the chicken (in the refrigerator) for take-away lunches or meals on the go. When preparing your shopping list, be sure to look for unsweetened, light coconut milk.
