A simple, marinated, grilled chicken breast is sprinkled with a bright and vibrant tomato topping. Bruschetta is a traditional Italian antipasto (appetizer). Bruscare, the root word of bruschetta, means "to roast over coals,” and refers to the toast classically used in the traditional recipe. In this recipe, the whole wheat toast as well as the marinated chicken breast will both receive the bruscare treatment. The topping really marries all of the ingredients together. Oodles of fresh tomatoes are tossed with garlic, basil, balsamic vinegar, extra virgin olive oil, and lightly seasoned with salt and pepper. An extremely tasty, seasonal recipe — perfect for a summery meal!
Prepping Ahead and Time-Saving Tips
To save on time or as a meal prep option, feel free to marinate the chicken overnight. You could also marinate, grill, chill, and reheat the chicken breast for even more time savings. We don’t recommend making the bruschetta topping ahead of time, the vinegar can cause the tomatoes to get a bit soggy.
