Coconut cream is our main ingredient; it makes the perfect base for ice cream and is a lot healthier than what you'll find in many store-bought brands. Do keep in mind that coconut is high in saturated fat, though it also has the capacity — likely thanks to the lauric acid — to increase "good" HDL cholesterol, as well as offering antioxidants. Eat in moderation and in consideration of your overall health situation.
Sweetener is totally optional here. If you prefer the natural sweetness of the coconut, you can definitely omit additional sweeteners. For all the sweet-tooths out there, feel free to use your favorite one — agave, raw honey, maple syrup, or molasses. Depending on the fruit you use, you can switch between them to find your favorite one.
The add-ons and variations are limited only by your imagination. There are no limits to creativity here. Berries, mangos, watermelon, nut butters, chocolate chips, herbs – all of them can be used to make your own version of this recipe. One little tip is to use some melted, high-quality dark chocolate to dip it in for some extra indulgence.

Ingredients
1 cup coconut cream
½ cup strawberries
½ cup blueberries
6 tsp honey (substitute with agave, maple syrup, molasses, etc. for vegan alternative)
Recipe
- Melt the coconut cream until creamy.
- Rinse and chop the fruit finely.
- Put fruit in separate bowls and add 2 tsp of honey to each bowl.
- Stir to combine and slightly press the fruits to form a rough puree.
- In popsicle molds, put a tablespoon of fruit puree, a couple of tablespoons of coconut cream.
- Repeat until the mold is full.
- Put the grips inside and put in a freezer for at least 2-3 hours.
- When completely frozen, take out from the freezer and put them aside for 2 minutes to loosen.
- Enjoy on a hot day!
Note: Feel free to use whatever fruit you have or is in season. Peaches, cherries, apricots, and blackberries are also great options.
