These wholesome, fiber-filled, low fat oatmeal cookies taste so good that you would never even guess that they are healthy.
They have low sodium, and not an ounce of butter or sugar. A recipe without butter or sugar doesn’t sound at all like a cookie, by definition, but give this recipe a try and you are guaranteed to not miss those unhealthy fats and empty calories a bit.
Ingredients:
Fluid Ingredients:
½ Cup Olive Oil
½ Cup All Natural Honey
1 Egg
1 Tsp Vanilla
Dry ingredients
1 Cup Flour (wheat is healthiest)
1 ½ Cups Oatmeal
2 Tbsp Cinnamon (more or less, depending on your tastes-I recommend more!)
½ Tsp baking soda
½ Tsp Salt
½ Tsp baking powder
½ Tsp Nutmeg
Healthy options to add to the mix:
½ Cup of one or more of the following;
Raisins
Dark chocolate chips
Walnuts
Combine the dry ingredients together in one bowl, and the liquid ones in another; mix both well. Then add the dry and liquid ingredients together, adding a bit more flour if the dough is too wet. Preheat the oven to 330 and let the dough cool in the refrigerator for 15 minutes. Drop the dough onto a lightly greased or floured cookie sheet, and bake for 8-10 minutes or until golden brown. Makes 24 small, or 12 large.
